Yeah, SWBF1 lets you "go prone" (lie on the ground) which you can't do in the second game, plus you get first person cockpit views with HUD (you don't get that in SWBF2, and most vehicles are missing first person views, except when zooming). Vehicles are nerfed in part 2, and infantry is beefed up (you can "dash" and do tricks with flying vehicles). They removed air vehicles from all the ground maps in SWBF2, except for Hoth. Also about half the SWBF1 MP maps don't appear in SWBF2, though people are SLOWLY converting them over from the first game.
Single Player wise, the first game is extremely short and repetative (the GC stuff is all just recycling). But at least in SWBF1 the enemy doesn't have infinite reinforcements to make it artifically hard and force you to do "all the work" on your team.
You can give more and better orders in SWBF2, but oddly only in MP. In SP your orders still suck. The graphics are about the same in both games, at least on the PC.

Yeah, that pissed me off. On the Blockade Runner Mission, the Rebels had infinite troops while the Stormtroopers boarding it from the Star Destroyer, only had something like a hundred men. What bullshit.

The Tantive IV mission is nasty...
so many grenades in an enclosed environment. pure chaos...
when the play Vader option comes up... just watch where you runnin' with that sabre...

I've had this game for quite a while and have played it to the point of boredom. I still like to play every once in a while, its really the first shooter game since Goldeneye for N64 that I've really gotten in to. I think the Jedi are a neat addition over SWBF1, although playing against them with a gun user can be bullshit at times since they have the indefinate ability to BLOCK EVERYTHING with their lightsaber.
The only real gripe I have about the game is the lack of usage of some characters. Count Dooku and Ki-Adi-Mundi are only playable on ONE planet, Anakin can only be used on Mustafar and in the "Nightfall" scenario. Obi-Wan is completely overused as is Boba Fett, they need some more variety or an option to use whatever hero character on whatever planet you'd like.
I'm pretty happy with the game otherwise. Mos Eisley and Kamino are awesome levels to have "shoot'em'up" free for alls
