A knight is a mounted warrior in service to a lord. When he needs troops, the king asks his lords to provide x amount of knights for the army. A paladin is a mounted warrior in direct service to the king. Religion has nothing to do with it, and was just tacked on in role playing games. Lets face it, all knights were christians, just like everybody else then.

Knights are Paladins - both are the Christianised version of the Roman cataphractarius - a heavily armoured horseman, and owing to its rarity and the fact that legitimacy at the time was obtained by the church, Knights, Paladins, Barons whatever you want to call them were gentrified and christianised.
