The person who wrote that pasted transcript could not have spoken a truer word.
I'm not sure about the idea of leaving the show with the Series 6 ending... It was a good climax, sure enough, and it would have been quite satisfying knowing that Rimmer's last ever action was being the hero he'd always tried (and failed) to be. But I really don't think after everything the crew had gotten through and survived that it would have been the best thing to do. Meh. Just a thought.
Reading the RD backstage notes, the guys HAD tried to get Claire Grogan as Kochanski, and they wanted to keep Rimmer - both had commitments that prevented them from appearing as much as they wanted to, or at all.
And I must say, bringing back Norman Lovett as Holly was a stroke of genius. I didn't warm to Hattie Haydridge at all, so seeing the original (and the far better) was probably the best thing about Series 7. And good ol' Ace, of course.
A quick burst of trivia - there were 4 possible endings for Series 8, and one of the, involved Rimmer from Series 7 in his Ace setup. Another involved an extra episode, entitled Die Young (to go with the previous one, Only The Good) where Red Dwarf DOES get back to Earth - and crashes through pretty much every single national monument on the planet at high speed. Now THERE's a sight I would have payed to see.
Jesus, I've written a lot. Anyone still reading this? Really? Wow. You've got a bigger attention span than I have.
For your trouble, have a basket of Blueberry Muffins.

Muffins are good. And I'd have to say, I didn't much like the ending to season 8. Either of the alternate endings you said would have been better.
The Green Knight, SimeSublime the Puffinesque, liker of chips and hunter of gnomes.

(*clotheslines Brick as he runs away, steals his and Sime's muffins while he's down, points and laughs, then runs away to get a good safe view of the kaboom*)

They make cranberry juice. Delicious, delicious cranberry juice. And some other stuff, apparently, all dust compared to cranberry juice.

the rasons for getting rid of the original Kochanski were due to a legal-altercation, involving a sexual harrasment claim or something...
although the original actress was dating craig charles (lister)... and that went somewhat wrong... obviously...
chloe arnett was chosen out of neccessity and proably for her uptight, presciouss acent, visual yumminensss... um.. i've forgotten where i was going with this... now all i can think about is that chloe girl now...

Evil, evil cranberry juice!
Luring the unsuspecting drinker into a false sense of security with its deliciously sweet fruity flavour like a kindly old gentlemen offering sweets to a child.... then BANG - oh no! It was all a cunning deception as it hits you with the vile, repulsive bitter aftertaste like being kicked in the nuts by a kindly old gentlemen.
Its not my favourite fruit juice.
Oh but you've got to admit - Brick has a point
