I started tonight's dinner by making another boring salad. What can I say? When you get a bunch of lettuce and you make a bunch of salads it's difficult to keep it exciting.



Today I had a giant (actually, it was fairly average sized) head of broccoli to deal with. I was feeling pretty fatigued after the past few nights of culinary creation. It wasn't so much the cooking as it was doing the cooking after a long day at work. I was feeling a bit lazy so I figured what better to make than broccoli cheddar soup.



I had some onion and garlic around so I sauteed them up in a little bit of butter. Then I peeled and chopped the broccoli stalk and sweated that with the onion and garlic. After a few minutes I added the florets and a touch of salt and pepper. Then I used up some extra chicken stock I had around and simmered the mix for about twenty minutes. Then I added a bit of skim milk and continued to simmer for an additional twenty minutes. Finally I pureed the mixer with our immersion blender, removed from the heat, and tossed in a small handful of shredded cheddar.



The result was pretty good. The soup was creamy and thick enough that I didn't need to add any roux at all. Paired with a nice fresh loaf of bread and some of the leftover camembert (which seems to have gotten better in the last week) it was pretty good.

And it looks like after three days we are out of the food that was "enough for a family of four or two enthusiastic vegetable eaters." I guess we're much more enthusiastic than I would have imagined.
