The irony is that he had made an absolute statement by saying that only a Sith would deal in absolutes.
"I felt insulted until I realized that the people trying to mock me were the same intellectual titans who claimed that people would be thrown out of skyscrapers and feudalism would be re-institutionalized if service cartels don't keep getting political favors and regulations are cut down to only a few thousand pages worth, that being able to take a walk in the park is worth driving your nation's economy into the ground, that sexual orientation is a choice that can be changed at a whim, that problems caused by having institutions can be solved by introducing more institutions or strengthening the existing ones that are causing the problems, and many more profound pearls of wisdom. I no longer feel insulted because I now feel grateful for being alive and witnessing such deep conclusions from my fellows."

A Jedi that advanced should have learnt by now not to be angry or irrational under pressure.

See thats the problem
You can't just be exp​ressionless in a battle.

So what you are telling me is that if someone cuts
off your arm your not supposed to scream
just keep fighting.

There has to be passion otherwise whats the
point in moving your arms ???? just die
it would be a lot easier and less time wasted

for the record:

"You're either with me or you're against me" = an Ultimatum
"Only a Sith deals in absolutes" = an Absolute

You're right, it is an absolute statement, and it was in its original context too.

If you all think back to the Bush/Kerry debates in 2004, George Bush made a retort to one of John Kerry's remarks by saying "I only deal in absolutes". I took the remark in Ep3 as a feeble attempt by Lucas to say George Bush is evil.

Maybe I'm completely wrong and Lucas didn't even notice the connection, but it seemed pretty blatant to me at the time I saw the film and I know Lucas is a huge supporter of the Democratic Party and very anti-war (which is funny he chooses to make movies about wars). Plus there are other occurences. In Ep1, one of the bad-Japanese accent, Nemodian guys is named Nute Gunray (Newt Gingrich?) And near the beginning of Ep3, Amidala is telling Anakin about trying to stop this pointless fighting (Iraq war?) - that one might be a stretch, but the other two seem pretty plausible.
