Let's assume for the moment that because of the astromech droid you can fly the X-wing with minimal piloting experience. Fair enough....

However, I seem to recall R2-D2 getting blasted by Vader in the Death Star trench, thus leaving the piloting completely up to Luke (and conveniently at the point of the level....I mean movie, where he is flying in a ridiculously tight area AND has three TIE fighters on his back). You can't tell me Obi-Wan's five minute lesson on how to deflect laser blasts with a blast shield on would be sufficient training for him to manipulate the force to a level where he can avoid TIE fighter shots and fire a dead on proton torpedo shot.

Another thought....when Vader finally locks on to Luke's X-wing and says "I have you now" we clearly see he fires at least six shots before Han destroys one of the accompanying TIE fighters. Why don't those shots hit Luke's X-wing? Did Han arriving in the nick of time and firing just "cancel out" Vader's shots?
Insufficient.

In the PT, Anakin also claims he is a "pilot" when he first meets Padme. It wasn't enough for me in the TPM (even with the pod race), and certainly isn't enough for me in ANH (Whoops, I suppose I should refer to it as STAR WARS to prevent people from having their childhoods robbed from them).

FINE. YOu don't like STAR WARS. You look for excessive realism in Space Fantasy. You don't accept that Luke taps into the Force at the end of STAR WARS,in the trench, and that it is a turn away from mechanization, and a return to animism that saves the rebels and removes the "technological terror" from the galaxy. Even though that was like, one of the main themes of the film. You don't like STAR WARS. Fine. Now just shut up about it, or find some new point that we haven't completely disregarded. Because in case you misunderstand, we all agree that of course the stuff that happens in STAR WARS is impossible. But within the confines of the movie STAR WARS, it's all perfectly within the rules.

PS: in The Lord of the Rings, The Balrog isn't real either.
"I had a lot of different ideas. At one point, Luke, Leia and Ben were all going to be little people, and we did screen tests to see if we could do that." -George Lucas, in STAR WARS: the Annotated Screenplays (p197).

Plenty efficient. Having a main character offhandedly mention Luke’s piloting ability is enough. Why is it necessary to have each and every detail throw in your face - that’s the stupid crap we had to settle for in the PT. I don’t know about you, but I’m not fond of having my intelligence insulted whilst watching a film.

Exterior of the Millenium Falcon, 2 stormtroopers are standing sentry duty, Death Star docking bay.

From inside the Millenium Falcon a voice calls out:

Hey down there! Can you give us a hand with this?

[And now, from the super secret on the cutting room floor archives]

Gotta change Chewie's litter box, and it ain't pretty!

**********************************************************************

Diligent_D - "Gimme my medal, bitch!" Good one! I always thought it sucked that Chewie did NOT receive a medal. At least, not in the movie. What's weird, though, is in the novelization, written by GL, Leia had to REALLY stretch up on her tiptoes to give him a medal. Maybe they decided it would be "undignified" for her to stretch so high upwards on screen to give even a well deserved medal? The height differences between Carrie Fisher (5'1") and Peter Mayhew (7'3") would have made it awkward, but not impossible, if Peter stepped down a couple of steps, or even knelt before her, showing courtly respect that Han and Luke did not.

What? When was that ever established? For all we knew, Tatooine was anarchy, with vague, corrupt or virtually non-existent Imperial presence.

Episode I established that Tatooine's system was "ruled by the Hutts" (and that the Hutts were gangsters, not just Jabba). Beyond that I'm not sure where you got that...

PS: The only way to really explain away Vader's shots is that he used a "strafing pattern" to take out each of his targets, wasting valuable ammo each time, rather than just firing all six shots into the butt of Luke's fighter (which would have overwhelmed its shields and destroyed it, as such tactics worked flawlessly on everyone else beforehand, except maybe Wedge, who got away with only damage).

PPS: STAR WARS (in-movie) establishes that the Empire doesn't think the Rebel fighters are any threat to the Death Star. Tarkin is notoriously over confident and refuses to evacuate. The only fighters we see attacking the Rebels were specifically ordered to attack by Darth Vader.

Since Tarkin was in charge of the station, presumably Vader only had a small complement of fighters at his command, by virtue of being the Emperor's envoy. So that's why you didn't see thousands of fighters swarming around wiping out the rebels (besides budget of course).
