Yep, GTA has been ported to PC and XBOX and Gameboy Advance (I think) but they have always been on Playstation first.
I've always been quite partial to the RE series. If any of you have played the first you WILL remember the Jill 'Master of Lockpicking' line. Played out like a B-Movie and I loved every minute of it.
PS: Boo on you for forgeting the great platformers of the Playstation. Poor poor Crash Bandicoot and Spyro.

Grand Turismo is also a PS series. And there are a lot of one-game series (if that thing even exists) such as God of War.
I voted for Final Fantasy. I know, I know, FF X and FF X2 aren't that great, but I'm just a sucker for Square-Enix's games, specially Final Fantasy. I would have voted for Kingdom Hearts, but there is something about mixing FF characters and Disney characters that just doesn't get to me. It's probably the Disney part of the game.
MGS are good, but I don't dig much into those you-have-to-be-silent-else-you're-dead games. I have never played Devil May Cry, and Resident Evil are great games, but I could never get much time to play them. My other real choice was GTA, but I had to go with FF.

I believe it was "Master of unlocking." And I still use my lighter of lighter at times...
One game does not make a series. I don't think there are any Playstation exclusive series, actually. And MGS gets my vote for being such a badass stealth action series. The message and plots are great (if sometimes insane), and nothing beats hiding in the cardboard boxes.

Resident Evil is Capcom and Metal Gear Solid is Konami. I don't know who makes Spyro or Crash, but they're both crap. Grand Theft Auto was on the PC long before the playstation(Notice the '3' in GTA 3, it implies that there were actually GTA games before it! Personally, I thought they were better). Final Fantasy and Kingdom Hearts are both Square/Enix(and hell, Final Fantasy 1-6 was on Nintendo, so don't try to pass FF off as Playstation). I have no idea about Devil May Cry.
So, do Sony actually have any first party games?
Personally, the only games for the PS1 that I have played and really liked were Medievil, Metal Gear Solid and Tomba/Tomba 2(I've only played Resident Evil on the Game Cube). That being said, I still have a couple of games that Laughlyn reccomended lying around waiting to be played(Ultima 6 and Persona 2).

More or less. I occasionally enjoy them, but (as mostly any other games) I find them very entertaining playing agains other human players.
About the first party games thing: the fact that you can ONLY play those games in that system pretty much make them that system's series. I´m not referring to the series in the poll, I know that GTA games can be played in other platforms, and that there are Final Fantasy and Resident Evil games for other systems, but again, if you want to play the ones PS2 has, you HAVE TO HAVE a PS2.
And I agree, a single game does not make a series, I didn't express myself as clearly as I wanted there. But they are still exclusive games.

The GTA GBAdvance game was like the first one. But It was worse.
