Despite the ridiculous run-on name, I'll throw in a vote for Jerrjerrod; he has to absorb "the Emperor is not as forgiving as I" line.
Veers is of course, a close second, if for nothing else, not flinching when Vader wheels around and screams for him to "PREPARE YOUR MEN!!"

Tarkin explodes Alderaan, killing all residents.

Tarkin is made to look the fool by not evacuating.
Tarkin's "planet" explodes, with him on it.

Tarkin (Who was never called Grand Moff Tarkin at any point in the film) was a very cool character - in a way he was the foil for Guiness in SW and he was a memorable screen villain - he had charm, menace, grace, an excellent voice, carpet slippers and had such a great psychological presence, also when he needed something physical done he had his capable henchman, Vader to do it for him.

As an actual military officer - I've always liked the look Piett gives Vader after Ozzel's executions - it is a very good facial exp​ression and so brilliantly conveys his 'well I'm an admiral now: good, but the last admiral didn't do very well now did he: bad' feeling so well.

What about rebel officers - Moses (I mean, Dodonna), Red Leader, Gold Leader, Riekaan, Ackbar, Madine? (Character-turned-officer such as Han or Lando doesn't count)

During Ackbar's tactical speech I reckon he gives the impression of someone who loves war and knows he's gonna be ok because of what a jolly good wheeze all this scuffling is.

Ya I have an affinity for Akbar as well. But favorite Rebel Officer would be Riekaan, only because Akbar lost a few points with me due to over-caution during the Death Star battle. What ever happened to Riekaan? I thought I read somewhere that he died during the Hoth battle.

I guess he must have done, otherwise I'm sure we'd have seen him at some point in Jedi.

I heartily agree - besides, in a literal sense they do not exist, even in film world - no one saw any Gungans during production. They might have seen a few guys wearing hats but thats it.
